Ideas for your next barbecue

Hey all - what is everyone cooking up this weekend? I'm thinking it's ribs, probably pork, although lamb ribs are pretty on point to smoke at the moment.

What's on your grill or smoker?

@MoonshineBen,

Had another go at beef short ribs yesterday. Delicious! Looking forward to some leftovers for lunch!

What have you been cooking lately?

Re: What's everyone cooking this weekend?

We actually competed this weekend at Beef in the Vines in Port Macquarie. We cooked up brisket, chicken, ribs and lamb. I'd post some photos up, but they're all a bit ordinary, we didn't have great natural light where we were boxing up.

Re: What's everyone cooking this weekend?

It had been a while since I'd done a slow cook in the barbecue so I did some beef short ribs for the family on Saturday. Delicious!

Re: What's everyone cooking this weekend?

Not cooking as frequently as I'd like, that's for sure. We have the Kangaroo Valley comp coming up next month, so have put most of our practice into our two nemesis comp cuts, brisket and ribs. Oh and a slab of bacon for good measure.

How's your preparation for the competition going @MoonshineBen?

I hadn't cooked brisket for a while so gave it a crack yesterday. I decided to try putting it on earlier than usual but I reckon I overcooked it a little. Just fell apart which is great, but was a little too dry. Nothing some barbecue sauce couldn't fix though! It was still great eating.
