Ideas for your next barbecue

Hey all - what is everyone cooking up this weekend? I'm thinking it's ribs, probably pork, although lamb ribs are pretty on point to smoke at the moment.

I noticed Aldi had brisket when shopping so threw it into the trolley for the first time. I know all the BBQ experts rave about it. I didn't BBQ it but cooked it in the slow cooker all day yesterday with some beef stock, mustard, honey and rosemary. It was fantastic for soft shelled tacos with coleslaw. Will be getting it again and would love to try BBQ brisket next time.

I cooked a couple of lamb shoulders low and slow on the barbie yesterday. Went great with the pulled pork from the slow cooker. 

 

Anyone cook anything memorable on the weekend?

 

And who is planning to cook outdoors on Christmas day?

Here’s part of yesterday’s Christmas Eve feast - a while snapper caught in the bay cooked on the barbecue.

Was pretty happy with this 2kg brisket I slow cooked on Saturday. I used a rub of brown sugar, paprika, salt and pepper and popped some hickory chips in the smoker box. I should have taken a photo after carving as this photo below doesn't look great. It was delicious!

I made home-grown jalepeno poppers on the weekend with cream cheese and bacon - delicious! 

 

Followed them with some burgers. I tried making a Juicy Lucy for the first time (cheese in the middle of the beef patty). Minor fail as three out of the four patties leaked cheese onto the hotplate. They were still delicious but I suspect I just cooked them a fraction too long.  

 

Also, I think I forgot to share my brisket from the week before.

I'm trying something different today and doing a slow cooked beef roast on the barbecue. Will let you know how it goes.
